From the first plantings of Durif in the Swan Valley, the grapes are handpicked, destemmed and crushed into small batch open fermenters . Gently macerated with carefully managed ferment to maximise flavour and tannin structure. Matured in new and old oak for 12 months to create added complexity and depth of flavour.
