Sparkling wines by pinelli estate
At Pinelli Estate, our winemakers use the traditional French process called the ‘methode champensoise’ to produce our Sparkling wines. Although more labour intensive, this method produces Sparkling Wines of greater character and finesse.
Our winemaker, Daniel Pinelli, oversees the production of these wines and was the winner of the Domaine Chandon Prize for the best Sparkling student at Charles Sturt University in his studies.
Grapes destined for Sparkling wines are picked slightly earlier than a normal white wine, while still crisp with natural acidity. The resulting base wine goes through two fermentations. The second with the the addition of a little sugar and yeast. This is what drives the production of the bubbles that characterise a sparkling wine.
The wines are then left for an extended period to develop additional complexity. At Pinelli Estate, we want to create nutty, toasted characters and a creamy texture.
Once ready, the wine is corked, ready to pop and enjoy.

Sparkling Eve Brut
A traditional methodè Sparkling wine with a lifted nose of fresh citrus and apple characters. The palate is delicate and offers apple, citrus and cashew notes with a creamy texture.
Ideal wine for a celebratory toast for any special occasion. Served as an aperitif or with any seafood dish such as oysters and scallops.

Sparkling Juliet
A traditional methodè Sparkling wine with a lifted nose of fresh tropical fruit characters with some additional sweetness compared to Sparkling Eve Brut.
This wine is for those who enjoy a slightly sweeter style Sparkling with a palate that offers crisp apple, tropical and cashew notes with a creamy texture.
Ideal wine for a celebratory toast for any special occasion. Served as an aperitif or with any seafood dish such as oysters and scallops.
