Grapes are left on the vine to ripen for a higher sugar content with ripe fruit characters. Handpicked, destemmed and crushed into small batch open fermenter. Gently macerated with carefully managed ferment to maximise flavour . Neutral spirit added to halt fermentation and retain sweetness. Matured in old oak barrels. Different vintages tasted and then blended together before bottling
