Cabernet Sauvignon (70%) and Merlot (30%) is handpicked, destemmed and crushed into small batch open fermenter. Gentle macerated with carefully managed ferment to maximise flavour and tannin structure. Matured in new and old oak for 12 months to create added complexity and depth of flavour.
