Handpicked, destemmed and crushed into small batch open fermenter. Gentle macerated with carefully managed ferment to maximise flavour and tannin structure. Matured in new and old oak for 12 months to create added complexity and depth of flavour.
Medium-bodied wine with lingering notes of black cherries and violets on the nose and with a finely textured palate. This wine is a blend of Cabernet Sauvignon sourced from Margaret River and Merlot grown on the Estate in Caversham.
Ideal served with roast lamb on a cold winters night with plenty of roast vegetables or a cured meat platter in summer. Best enjoyed around a table (La Tavola) with friends and family.
