Handpicked, destemmed and crushed into press. Juice is drained for a duration of 2 hours. Once clarified, the juice is inoculated with a select yeast strain and then cold fermented. Dryness and flavor assessment throughout ferment to ensure maximum flavor. Bottled early to retain freshness and appeal.
